I love my dessert. In fact half the reason I workout and eat healthy is so I can have dessert. So when I find a recipe that satisfies my sweet tooth and isn’t soooo splurgy I feel guilty, well then I must share! Two of my favorite things? Chocolate & banana!
Gluten-Free Banana Chocolate Protein Muffins
Make no mistake – these are dessert! They contain however, NO GLUTEN and NO PROCESSED SUGAR! They also aren’t a total calorie & fat bomb and they are tasty!!! Your kids will love them and nobody will care that they are gluten free.
- 3 ripe, mashed bananas
- 2T coconut oil melted
- 1/3c maple syrup
- 1/8c coffee
- 2T mild honey
- 1 egg
- 1t vanilla extract
- 1c almond meal
- 1/4c coconut flour
- 1/3c cocoa powder
- 1t baking powder
- 1t baking soda
- 2 scoops whey protein powder (vanilla or chocolate)
- (optional: add 1/3c chocolate chips)
With a hand blender, mix all wet ingredients with banana until smooth.
In a separate bowl, mix all dry ingredients. Make sure there are no lumps. Almond meal can get clumpy sometimes.
Add dry ingredients to wet. Barely mix until just combined with no lumps.
Scoop batter into cupcake tin with liners.
Bake 18-20 minutes @ 350 degrees F. Done when a skewer inserted comes out mostly clean.
